No Bake Energy Bites







INGREDIENTS:

  • 3 cups gluten free, quick cooking rolled oats

  • 2/3 cup toasted shredded coconut (sweetened or unsweetened)

  • 1 cup creamy peanut butter

  • 1/2 cup ground flaxseed

  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips)

  • 1/2 cup honey or maple syrup








DIRECTIONS:

- Stir all ingredients together in a large mixing bowl until thoroughly combined.

- Cover the mixing bowl and chill in the refrigerator for 30 min. 

- Take mixture out of fridge and roll mixture into 1-inch balls.

- Enjoy immediately  or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.
